Have you ever found yourself sitting in your kitchen, staring in the fridge, freezer, and cabinets looking for something (anything) your child MIGHT eat. It happens at this house all the time. I am constantly trying to find new ways of getting some type of food into the toddler.
Fridays on The Adventures of “But Mom”, we will be dealing with feeding the finicky. Now, the first recipe I have is really almost more of a dessert. I will say it can be made a whole lot more healthy if you have the proper ingredients on hand. I however was wanting to celebrate National Pancake Day, and so we kind of threw this together:
Double Chocolate Peanut Butter Pancakes:
3 cups Complete Pancake Mix (the one that you just add water to)
1/4 cup Chocolate Hazelnut Spread
2 cups Water
1/2 cup EACH Chocolate Chips & Peanut Butter Chips
Nonstick Cooking Spray
Easiest recipe EVER
I warmed the 1/4 cup chocolate hazelnut spread with 3/4 cup of water in the microwave for about 20 seconds just to get them to combine. Mix the water, spread, and pancake mix in a bowl until all big lumps are out (do not over mix). Heat pan over medium low heat, spray with nonstick cooking spray (I sprayed a tiny bit between each pancake I made) pour about 1/3 cup of batter in pan, swirl slightly to make a more round pancake. While pancake is cooking, drop a few chocolate chips and peanut butter chips onto the pancake and push into batter (I used a teaspoon to add an extra bit of batter to cover the chips so they don’t make direct contact with the pan when you flip the pancake). Cook until edges look dry and bubbles form on top of pancake, flip pancake and cook for an additional 1-2 minutes.

This week has had a few interesting moments for sure. First off, this week was National Pancake Week and while my plan was to make pancakes every morning, yeah, that didn’t happen. I did however manage to try out a new recipe for Double Chocolate Peanut Butter Pancakes. It was super easy and yummy, I’m posting the actual recipe tomorrow in the Finicky Feeding Fridays post, but just as a teaser think chocolate hazelnut spread, chocolate chips and peanut butter chips… YUM!!!
We have had our share of trying toddler moments as well this week. Being on schedule definitely helps to avoid tantrums, and naps help tons too. We have been doing lots of going lately which means Kira misses naps and that means we have meltdown central. We have however discovered that she will go to her room when told to and calm down and start playing with her toys in there which gives everyone a break and chance to calm down, this is awesome and I am so very thankful for this. I also have found a few things she has recently started enjoying (bath time and book time are among them) and these help the evening go more smoothly when she is starting to get beyond tired. Gotta love the “Trying Toddler” years.
As I sit here, watching my toddler run around and terrorize my house, I realize just how blessed we really are. I have my share of days where I feel like I NEED order in our lives, and while this morning when she woke up I told her right away that we needed to get some of her toys out of the living room (they literally made an even covering over part of the floor), they also remind me that we are blessed that she has so much to play with.
I have my days where toddlerhood saps the life out of me. Days where it takes every bit of energy just to keep my eyes open, but thinking about the excitement and curiosity of a toddler tends to take me to a whole new place. A place where every thing is new and exciting, a place that helps me to gain some energy and patience and allow her to explore more.
We have been so blessed that every day we wake up to a new day to spend as a family. We get a chance to help our kids explore, discover and play. Toddlerhood is trying for sure, but it is a blessing all the same.
